I have been making hobo packets since I was in 3rd grade…when they were a staple at my Girl Scout campouts. Now they are the essence of camp-food for our family. Before we started our full-time RV adventure, we were weekend campers and this was a staple for every camping trip.
Hobo packets are simply individual one-pot meals cooked entirely in a foil packet over the campfire or grill. I always prefer Heavy Duty Reynolds Aluminum Foil if I have it on hand…I think it cooks much better than a double layer of regular foil. Regardless of what foil…make sure it is sturdy and durable…double it up if needed so that the moisture and steam does not leak out. In our family, I prepare all of the ingredients and place them on the outside picnic table. I then line up foil sheets and place 4-5 slices of potato each, and place raw ground turkey or beef on top of the potatoes, with a sprinkle of my onion soup seasoning (this is my trick to prevent my meat and vegetables from burning). Then each person adds the ingredients of their choice and I sprinkle more dried onion soup over the top and seal it into a nice little pouch. We write each persons name on the foil packet with a permanent marker and cook until done. Place the packet onto a sturdy plate and eat straight from your hobo packet…be careful it will be crazy hot!
Hobo Packet Necessities:
- Ground Turkey or Beef
- Foil for each packet
- 2-3 Potatoes, sliced
- Onion Soup Packets such as Lipton (we use 1 1/2 for our family of 5)
- Chopped Onions
- Chopped Zucchini
- Chopped Carrots
- Chopped Red Bell Pepper
- Can of Corn Kernels
- Sliced Jalapeños (for those that like the heat)
- plus any other veggie we might have on hand
Another option is to make Asian Hobo Packets. These are delicious with chicken, red bell peppers, sweet potatoes, pineapple, cubed sweet potatoes, onions, garlic and drizzled with ponzu sauce, minced cilantro, grated ginger, sesame oil, salt and pepper and sliced green onions.
Really, the possibilities are endless. The idea is to creatively make your own one-packet wonder and eat around the campfire. Enjoy!
