We are a family that loves slow-cooker cooking! It brings delight to each one of us when we walk into our home at the end of the day and smell that home-cooking yumminess. Pot roast is a seasonal favorite of ours…although we’ve been known to make it anytime of the year. Here’s my favorite recipe…

In a slow cooker combine:

  • beef round roast (I prefer a nice lean roast)
  • 1 onion, sliced into rings
  • 1/4 c all natural beef bouillon dissolved in 3/4 c water (Better than Bouillon Beef Base)
  • course ground pepper
  • 1/2 tsp 21-Season Salute (from Trader Joe’s)
  • 1/2 cup or so of red wine
  • 1 tsp dried thyme

Other Ingredient:

  • potato flour (or regular flour)
  • oven roasted vegies

Place onions in the slow cooker with the roast sitting on top of it. Mix the rest of the ingredients together and then pour over the roast. Cook on high for two hours, then on low for 6-7 hours. Take roast out and rest in foil. Strain broth and place in cast iron skillet. Mix 1/4 cup of potato flour in a 1/2 cup water in a jar and shake. Add to broth after it has come to a boil. Stir with a whisk. Serve roast with oven roasted veggies and gravy on the side. Enjoy!
